Pumpkin Chocolate Chip Muffins

This muffin is so moist and contains all the flavors of fall. The surprise of chocolate just takes it to the next level!

Preheat oven to 400 degrees Fahrenheit. Grease and flour the muffin pan or use paper liners.

In a mixing bowl, combine:

  • 3/4 cup Light Brown Sugar, not packed

  • 2 Eggs

  • 1/4 cup Water

  • 1/4 cup Olive Oil

  • 3/4 cup canned Pumpkin

  • 1/8 tsp. Ground Cloves

  • 1/4 tsp. Salt

  • 1 1/2 tsp. Ground Cinnamon

  • 1/8 tsp. Ground Nutmeg

Using a whisk, mix until well combined. Then add:

  • 1 1/2 cups All Purpose Flour

  • 3/4 tsp. Baking Powder

  • 1/2 tsp. Baking Soda

Whisk to combine the dry ingredients, then incorporate into the wet. Stir in:

  • 1/2 cup Semi-Sweet Chocolate Chips

Fill muffin cups 2/3 full with batter. Bake in preheated oven for 18-22 minutes or until done. Serve and Enjoy!
