Coconut Macaroon

These cookies are a sweet treat with a buttery, nutty flavor and a hint of tropical fun. Light, crunchy, and just the right amount of chewy, they’re like a mini vacation in every bite!

Makes 12 cookies

To a bowl add:

  • 1 cup Almond Flour

  • ½ cup unsweetened Coconut Flakes

  • ⅓ cup Sugar

  • 2 tbsp. Olive Oil

  • ¼ tsp Almond Extract

  • ⅛ tsp Salt

  • 1 Egg

Stir until well combined. 

Place by rounded teaspoon onto parchment lined cookie sheet. Bake 10 minutes in a preheated 350 degree oven. Remove and press down with a fork to ¼ inch thickness. Bake an additional 5 minutes. Remove and cool on wire rack. Serve & Enjoy!
